This spaghetti is made using red winter wheat by Fritz Durst in CA, and is crafted in the the same tradition as “chitarra” pasta. It is drawn through tiny square dies, resulting in noodles that have a thin flat shape instead of the typical circular tubes. This adds more surface area, which means more space for sauce to cling to! We think it is delicious with delicate ingredients, fish or cream-based sauces, and meatballs, of course.
